Mosaic Hotel set to open next week

The western suburbs’ new local – Mosaic Hotel – is getting the finishing touches ahead of its opening next week.

Mosaic is the result of a $4 million transformation of the former Checkside Tavern at Football Park in the heart of West Lakes.

Redeveloped on the same footprint as the former tavern, the new-look contemporary and spacious hotel offers various bar and dining areas, a bright alfresco deck with two-way fireplace for all-year round comfort, modernised sports bar with 10 big TV screens and TAB facilities and gaming room fitted with 40 latest machines.

Designed by prominent Adelaide-based architecture and interior designers Studio Nine, the Mosaic’s up to the minute main bar featuring Spotted Gum timber is a focal point of the dining areas, while plush velvet green booth seating and terracotta pendant lighting throughout the bar and dining area add touches of glamour and sophistication.

Frame Creative were behind the Mosaic’s branding, designing everything from logos and uniforms to the name – a reflection of the rich history of Adelaide’s west and its diverse and evolving community.

The project, which commenced in February this year, has been delivered by award-winning Pascale Construction.

Well-known to the local pub and hospitality scene is newly appointed general manager Emilee Moore.

Moore, also an internationally trained chef, has spent a lifetime in food and hospitality, growing up in her family-owned pub, the former iconic Brecknock Hotel.

Moore said she was thrilled to be a part of the all-new Mosaic which will cater for a broad range of people.

“Whether it’s welcoming back some of the tavern’s long-time customers or introducing the Mosaic to people who may have never known it existed, we’re really looking forward to
re-opening our doors to a wide demographic of people from all over Adelaide,” she said.

Moore’s passion for food and beverage, distilling gin, making wine and “enjoying an occasional craft beer” will be reflected in the offerings at the Mosaic.

“We’re excited to bring a modern vibe to complement the refurbished venue, with an extensive range of premium South Australian wines, gin, beer, cocktails and live entertainment,” she said.

The Mosaic’s Head Chef is Amanda Gutte who has cooked at many iconic Adelaide venues, including the Adelaide Casino, Convention Centre and Stamford Hotel, and has focused on a South Australian-inspired food menu around her ethos of using fresh, seasonal and local ingredients.

Gutte says the wide breadth of the food menu, from woodfired oven pizzas and pub classic parmi’s and burgers to bowl food and contemporary specialty mains, has been created to appeal to all foodies.

“Mosaic is about offering wholesome food, diverse flavours, unintimidating menus, and as much as possible about supporting authentic South Australian producers,” Gutte says.

The Mosaic is located on Turner Drive, opposite Westfield West Lakes, and adjacent to the vibrant and thriving new WEST development, with some 300 new homes at its doorstep.

It opens its doors to the public for breakfast, lunch and dinner on Thursday, September 17.
